Pastry chef & chocolatier Esther Pryor shares the history of cacao from Mesoamerica to the modern world.
Once considered more valuable than gold, the simple bean remains a prized ingredient in the culinary world from savory to sweet. Pryor discusses current trends & challenges in the chocolate industry, design techniques, & offer a sample of her own chocolate creations.
Pryor has worked as a pastry chef with fine dining restaurants, catering companies, & special event producers. She opened her own boutique chocolate & pastry company in 2013. Her approach to chocolate production is based in ethically sourced chocolate, clean ingredients, & global flavors.
